Our Honey
What to Expect

Pure. Natural. Sustainably Harvested.

At Marico River Honey Bee Co we bring you the finest premium, choice grade raw wildflower honey, crafted by nature and harvested with care. Sourced from the unspoiled landscapes of the Northwest province in South Africa, our honey is mainly produced from plant and tree species that occur in Thornveld habitats and other indigenous flora from the various apiaries, giving it a smooth texture, rich colour, and a sweeter taste profile.

What Makes Our Honey Unique?

The Journey from Nectar to Honey

Flower nectar starts out rich in sucrose.

Inside the hive, bees add natural enzymes (especially invertase) that convert sucrose into fructose and glucose. The longer the honey is allowed to ripen in the comb, the lower the remaining sucrose.

Key principle: Time inside the hive matters more than time on the plant.

Crop (Monofloral Agricultural) Honeys

Typical examples: Citrus, canola (rapeseed), sunflower, alfalfa (lucerne)

Natural conditions:

  • Short, uniform flowering periods

  • Extremely heavy nectar flows

  • Nectar often higher in natural sucrose

What happens in the hive:

  • Combs fill very quickly

  • Enzymes have less time to fully convert all sucrose

  • Honey may be capped sooner due to management or crop schedules

Typical outcome:

  • Higher natural sucrose (still within standards)

  • Brighter, sometimes sharper sweetness

  • Faster crystallisation

Wildflower & Thorn Tree Dominant Honeys

Typical environments: Natural veld, river systems, forest margins

Natural conditions:

  • Long, staggered flowering seasons

  • Moderate but steady nectar intake

  • Nectar generally lower in sucrose

What happens in the hive:

  • Honey ripens gradually

  • Enzymes have ample time to complete conversion

  • Honey is capped fully mature

Typical outcome:

  • Very low sucrose

  • Thinner in texture

  • High fructose dominance

  • Smooth, rounded sweeter honey

  • Slow crystallisation

What High Fructose Tells You

High Fructose is a quality signal, indicating:

  • Fully ripened honey

  • Complete natural enzyme activity

  • Careful harvest timing

  • Honey will crystallize slower

Consumer-Friendly Takeaway

Wildflower honey develops slowly, giving bees the time they need to naturally convert sucrose into fructose and glucose. This results in a smoother taste, gentle sweetness, and honey that stays liquid longer.

Premium Positioning Statement

Produced over a long, natural flowering season, our wildflower honey is fully ripened in the hive, naturally low in sucrose, and rich in fructose — a hallmark of true, mature honey.
